


Over the years we have employed different farming methods, such as progressing from using tar which is a carcinogenic to food-grade materials in the course of our product’s lifespan. Stocking density is a critical consideration in achieving maximum productivity. Methods over the years are inter-tidal and sub-tidal. We are a progressive and forward-thinking company.

QUALITY
We employ cutting edge technology using 3D optics to guarantee our product meets particular grades for our four levels of growth – Plate, Bistro, Bottle, Cocktail.

SEASONALITY
The old-timers always said that oysters in this area are best when harvested and consumed in months with a ‘R’ in them. So from September–April signifies our prime oyster season.

FLAVOUR
Our oysters are creamy in texture, mildly briny, with a medium-high umami. They are at the peak of their condition across Summer and into Autumn.
LOCATION
The lease base is situated at Casuarina Point where the Hastings River estuary and Limeburners Creek tributary meet.
